Cherry and Marmalade Muffins

Cherry and Marmalade Muffins are a match made in foody heaven, with mixed spice, its a real pleaser. With so many food cross-overs its can sometimes be difficult to separate Cupcakes with Muffins or some bread with cakes. Even sweet and savoury or sweet and hot collide occasionally, chilli and chocolate for example or salted caramel. Well today I wanted to explore the American Muffin in all its sweet and savoury variations. I love the American's appetite for choice and the American Muffin is probably the pinnacle of variation. Tinned Muffins can be made up with a bewildering array of ingredients, in fact you can have your breakfast cooked in a Muffin tin if you so desire. Over time i will bake more muffin recipes especially savoury ones.

For this muffin recipe I picked something quick and easy to begin with from Cupcakes and Muffins by Carol Paster, a book that is packed with Cupcake and Muffin recipes, their real easy to follow and you get quick results. Cherry & Marmalade sounded like a nice match and boy were they delicious. Since I live in the UK some of the ingredients don't exist here, but their easy enough to match up with appropriate alternative ingredients. I used a mini muffin tin and got 24 cases, with some batter left over.

Cherry and Marmalade Muffins Ingredients


225g self-raising white flour

5ml/1 tsp mixed (apple pie) spice (UK: mixed spice)

85g caster (superfine) sugar

120g glacé cherries, quartered

30ml/2 tbsp orange marmalade

150ml milk

50g butter, melted

marmalade, to glaze


Cherry and Marmalade Muffins

Preheat the oven to 200°C/400°F/Gas 6. Grease the cups of a muffin tin (pan) or line with paper cases.

Sift the flour into a bowl. Add the spice. Stir in the sugar and cherries.

Mix the marmalade with the milk in a jug.

Fold the milk mixture into the dry ingredients with the butter.

Spoon into the paper cases. Bake for 20–25 minutes, until golden.

Turn out on to a wire rack and brush with warmed marmalade.

You can store these Cherry and Marmalade Muffins in an air tight container and they will keep for a minimum of 3 days.


Adjust baking time to 15 minutes for mini muffins
