Its Sunday and to finish off the weekend here are some kids fun Cupcakes that will bring a smile to your little ones, possibly a few squeals of excitement to.  Making kids fun Cupcakes is a must joint venture with your kids. This Cupcake mix was made with the melted butter method which makes it so much easier to decorate as it leaves a nice flat surface. When it comes to decorating your Cupcakes, well the sky's the limit and it is so simple nowadays with ready made marzipan and fondant icing, along with cake toppers.

The kids fun Cupcake sponge is simple to make, taking around 15 minutes to bake. Once you have whisked your eggs, sugar and cream, add your lemon peel, then fold in your sifted flour with the baking powder, lastly fold in your melted butter. Bake off at 180 Celsius for between 12 and 15 minutes or until golden brown or spring back when you touch with your finger. Melting method: Here the butter is melted and left to cool slightly. The remaining cake ingredients are combined, and the cooled, melted butter is beaten in last. The resulting cakes will have a soft sponge-like texture and will rise evenly to give a flat top suitable for glacĂ© icing and sugar paste toppings.



MAKES 10 Kids CupCakes


2 eggs
115g  caster (superfine) sugar
50ml double (heavy) cream (full fat milk or butter milk if you don't have cream)
finely grated rind of 1 lemon
115g self-raising (self-rising) flour
2.5ml/ 1/2 tsp baking powder
50g butter, melted


Kids Fun CupCakes Method

Preheat the oven to 180°C/350°F/Gas 4 and line 10 holes of a bun tin (pan) with paper cases. Beat the eggs with the sugar using an electric mixer. Beat in the cream for 1 minute, then add the lemon rind. Sift the flour with the baking powder, then fold it into the mixture, followed by the melted butter. Three-quarters fill the paper cases with the cake mixture. Bake in the centre of the oven for 12–15 minutes until risen and golden brown. Test by lightly pressing the centres of the cakes with your fingers: the sponge should lightly spring back.
