This surprise lemon cupcake recipe is well worth trying out just to see the look of delight of the person biting into it for the first time. The same process can be used with a variety of different flavours. The one piece of equipment that is essential is a Bismark piping nozzle, it makes the job much easier and faster. The link takes you to Amazon.co.uk where i bought one myself, but you can just highlight the phrase and search, its not a nozzle i have come across in any of the big supermarkets. The Cupcake recipe is as basic as you can get, the main difference with this cupcake is the delightfully sharp lemon flavours.
150g caster sugar (fine sugar if you have it)
175g Self-Raising Flour
3 Happy eggs (Free Range) medium to large
Lemon flavouring (Lemon juice au natural or in a plastic container)

A quantity of fondant icing sugar (sets much better than normal icing sugar and has a nice glossy finish)
Half a jar of Lemon curd jam
Once your Cupcakes are baked allow to cool for 5 minutes then take them out of the cake pan onto a wire rack , leave to cool completely before the next stage. Now get a disposable piping bag, cut the bag at the tip for the Bismark nozzle to fit and fill with Lemon curd, holding your piping bag directly above the cupcake, stab down and into the cupcake and inject a generous amount of lemon curd into the cupcake.
The last stage is your fondant icing, for this i used about 6 heaped tablespoons of fondant icing and added lemon juice, beat it till i had a nice smooth fondant then add a touch of yellow food colouring to give a nice finish.
Dip your Cupcakes into the fondant icing using your fingers to spread it all over the top of the Cupcake. If you really want to make these Cupcakes stand out, add an edible sugar paste flower or butterfly.
