Lemon Raspberry Fondant Cookies

Something quick and simple to bake today with little preparation, these Lemon Raspberry Fondant Cookies are a combination of sweet pastry with a raspberry or lemon filling. The cookies have a glacé fondant finish topped with mini chocolate beans. The sweet pastry is my standard 3 2 1 recipe, that is 3 parts plain flour, 2 parts cake margarine and one part caster sugar. The other ingredients are raspberry jam, lemon curd and fondant icing sugar. Finish of these Lemon Raspberry Fondant Cookies with decoration of your choice, you could always place a fresh raspberry in the middle. If your in a hurry you can just lightly dust the baked cookies with icing sugar to keep the prominent star shape. Your imagination is the only limitation when it comes down to shapes, colours and flavours, so bake away.

Use the basic sweet pastry for your cookies or use your own recipe...

The method to make these cookies is fairly self explanatory. The main part of making the sweet pastry are the cookies, just roll out your pastry and cut out your bases, then your tops with the same cutter. Now pick a smaller star shape or any shape that you like and press out your shape from the top cookie. Now get a hold of a palette knife and spread your choice of fruit jam onto the cookie bases (see pic* below), don't overdo it though because you don't want the jam oozing out during baking. Once you have your jam or lemon curd spread place the shaped cookie top on top and press down lightly. Place onto a greased baking sheet.  Bake in a preheated oven of around 190°C / 375°F / Gas Mark 5 for 20 minutes or until lightly golden brown. Allow your Lemon Raspberry Fondant Cookies to fully cool then decorate as I have done or lightly dust with icing sugar.
