Chocolate Cherry Brownies

Time for some smooth richness and indulgence with Chocolate Cherry Brownies. Brownies are everyone's favourite because they have that serious chocolate hit and its nice to indulge now and again. This Chocolate Cherry Brownie recipe is as easy as it gets with about 15 minutes prep time and 30 minutes bake time. You will need a 9" by 12" tray bake tin, some bowls to mix and fold ingredients with a hand held mixer to whisk up your eggs and sugar. Dark chocolate is one of the key ingredients and its up to you how rich you want it to be. I stuck to 55 % cocoa, you can of course go higher. Use free range eggs and good quality butter. Glacé cherries add a nice natural sweetness with their own syrup. Please feel free to share your own favourite brownie recipe.

Chocolate Cherry Brownies


Chocolate Cherry Brownies Ingredients

300g Dark chocolate (over 74% cocoa content for rich flavour)
250g Butter (to melt with the chocolate in a bain marie)
4 large Happy eggs (free range)
200g Light Muscovado sugar
40g Cocoa powder (unsweetened)
1½ teaspoon Mixed dried spice
70g Plain wholemeal flour (use plain white if you don't have wholemeal)
200g Glacé cherries (don't wash syrup off (toss in flour cocoa mix))

Directions
Step 1
Preheat your oven to 180ºC / 350ºF / Gas Mark 4 and line a 9" by 12" tray-bake tin with baking parchment. Melt the chocolate in a bain marie with the butter, take off the heat and allow to cool down.

Step 2
Chop up the cherries roughly and set aside. Whisk the eggs and sugar with an electric hand-held whisk until caramel in colour and thick enough to leave slight ribbons, will take between 3 to 5 minutes.

Step 3
Fold the chocolate butter mixture carefully into the egg sugar mix and combine.

Step 4
Sieve the flour, cocoa powder and mixed spices together and toss the cherries until completely coated. Now add to the chocolate, butter and egg sugar mix, mix with a metal spoon until thoroughly combined.

Step 5
Pour mixture into the prepared tray bake tin and bake for 30 minutes, once baked allow to cool in the tin for 10 minutes then carefully flip over and remove parchment paper. Once fully cooled after 40 minutes or so dredge with either icing sugar or cocoa powder. and cut and portion.
