I had the urge to make apple pie today which I had with fresh double cream... to hell with the calories. I wasn't satisfied with that so I baked a batch of chocolate chip cherry cookies...soooooooo goooooood. You can see the apple pie recipe here, because its so delicious i just keep on baking it. The cookie recipe was originally a chocolate chip cookie but i added some glacé cherries to make them a bit more chewy. Both recipes are real easy to follow and overall shouldn't take you too long to bake.... even less time to devour.
Chocolate chip Cherry Cookies recipe (makes 18 large cookies)
oven @ 180°C / Fan 160°C for 10 to 12 minutes
150g
caster sugar
100g
light muscovado sugar
1 teaspoon Vanilla extract
2 large beaten eggs
300g
self-raising flour
140g
chocolate chips
60 roughly chopped glacé cherries
Beat
the sugar and butter thoroughly until evenly blended. Add the vanilla
extract to the beaten egg and then add a little at a time to the
butter and sugar mixture, beaten well between each addition.
Mix
in the flour, and lastly stir in the chocolate chips and cherries. Spoon (or use an ice cream scoop) large
teaspoons of the mixture on to the prepared baking trays, leaving
room for the cookies to spread
Bake
in a pre-heated oven, on the top shelf, for 8 to 10 minutes or until
the cookies are golden
Watch
them like a hawk, as they turn dark brown very quickly.
Will
keep in an airtight container for up to a week
