Spiced Banana Cookies


Today's bake are Spiced banana Cookies made with real banana and finished off with a topping of dark chocolate. I haven't posted for quite a while so this simple bake will ease me back into the home baking. I bake every day at work now so have less enthusiasm for home bakes. perhaps i will post more bakes from work. Back to the Spiced banana cookies which will take around 15 minutes to prep and 20 minutes to bake. With so many different varieties of cookies I wanted to make these with bananas, because I always have spare, so instead of throwing them out I can use them for this recipe.

The Spiced banana cookies have a nice combination of the banana and chocolate with just a hint of mixed spice. All the ingredients are your basic every day baking ones, the method will provide a loose cookie batter. You will need to chill the cookie batter for at least an hour, this will make it easier to handle.

Spiced Banana Cookies recipe

125g Butter
220g light brown sugar
1 egg yolk
100g mashed bananas
300g plain flour
half a teaspoon of bicarbonate of soda
1 teaspoon mixed spice

method
Cream the softened butter with the brown sugar and egg yolk until combined the fold in the mashed banana. Add the sifted plain flour, bicarb and mixed spice and mix by hand until a dough forms, wrap or cover bowl with cling film and rest in the fridge for at least an hour.

Take pieces of the dough and roll into balls placing onto a prepared baking tray about 2 inched apart. press down firmly with a fork and bake in a preheated oven @ 180 centigrade (conventional oven) for 20 minutes. Once baked place on a cooling wire until completely cooled then melt some dark chocolate and dip the cookies, allow to set and enjoy. Will keep in a sealed container for a week, during the hotter months refrigerate.
