Amaretti Biscuits

Amaretti Biscuits are almond flavored cookies, similar to macaroons, they are crisp on the outside and deliciously chewy on the inside. You can make them in all kinds of shapes and sizes, finish with icing sugar or dip in chocolate. there are many variations so why not experiment with different flavours. The basic recipe is simple to make, there are three main ingredients namely ground almonds, caster sugar and egg whites. To get the best out of the flavour its best to stand the Amaretti biscuits overnight at room temperature, I put mine in a cupboard. The biscuits are small bite size ideal with coffee.

Amaretti Biscuits recipe & method

120g ground almonds
220g caster sugar
2 large egg whites
1 level teaspoon almond extract
slivered almonds or optionally half a whole almond

Combine the ground almonds, caster sugar and two egg whites in a large mixing bowl and mix with a handheld electric mixer. Mix for three minutes then leave to stand for another five minutes. Prepare a baking sheet with parchment paper, then place a plain 1cm nozzle into a piping bag, pipe mixture onto prepared tray in a circular motion from the center out until about 4cm in diameter.

Place your almond on top and allow to stand overnight, after an hour or so the biscuits will have a skin so you can then place some kitchen foil or similar loosely over the top without sticking. If you have space in a cupboard then this is ideal to store overnight.

Bake in a preheated oven @ 180°C conventional oven for about 12 minutes, you may need to reduce to 10 minutes depending on your oven. Once baked allow to stand for around 5 to 8 minutes on the tray then place on a cooling wire.

To finish off your Amaretti Biscuits dust with icing sugar or dip in your choice of melted chocolate.
